Very tasty and easy to make. This is a recipe for 2 people and can be served with salad, boiled potatoes and/or anything else to your taste.
INGREDIENTS:
1 Onion (chopped finely)
1 Courgette (grated)
1/2 Carrot (grated)
50g Mature Cheddar (gratted)
1 tsp Italian Herb Seasoning
¼ tsp cooking salt
Freshly milled black pepper
100 g plain flour
2 eggs (beaten)
2 tbsp extra virgin olive oil (to fry only)
METHOD:
Mix all the ingredients together with a fork. Form into patties in your hand, flattening slightly. Fry in a non stick frying pan, in olive oil on a medium heat, turning a couple of times until cooked through, golden and slightly crisp on the outside.
